{November 17, 2009}   Bourbon Sweet Potato Caserole

It’s almost Thanksgiving…already. Ack! Snuck up on me this year. The best part of the holiday is getting together with family and friends, and sharing our favorite treats. My favorite…Bourbon Sweet Potato Caserole. Its a simple recipe even those cooking challenged can handle.

6 medium sweet potatoes
½ cup firmly packed brown sugar
½ cup butter, melted
1/3 cup orange juice
¼ cup bourbon
½ tsp. salt
½ tsp. pumpkin pie spice
1/3 cup chopped pecans
1 cup miniature marshmallows

Cook sweet potatoes in boiling salted water in a large sauce pan approximately 30 minutes or until tender. Drain; cool to touch, then peel. (Or take the simplified way and buy frozen mashed sweet potatoes)
Mash potatoes in a large bowl. Add sugar, butter, orange juice, bourbon, salt and pumpkin pie spice. Beat until fluffy and smooth.
Spoon into a lightly greased 1 ½ quart baking dish. Sprinkle pecans around the edge.
Bake at 350 for 30 minutes or until thoroughly heated. Sprinkle marshmallows on top and bake for 5 additional minutes or until the marshmallows are golden brown.
Serves 8 to 10
